I had the pleasure of assisting Chef N with his chocolate bonbons demo (for a private group dining at the Signatures restaurant) yesterday, and I watched him construct this lovely chocolate showpiece prior to the demo. The entire piece is made of chocolate (white and dark) and colored cocoa butter (red, yellow and green). It took Chef N a few hours to put it all together. Such a magnificent piece of food art! Unfortunately, the showpiece simply broke and fell apart right after the demo due to the heat in the demo kitchen. What a pity! :-(
Fortunately, I had taken a couple of photos of it while it was still intact, and that's how I will remember this chocolate showpiece.
Anyway, as the French say, "C'est la vie!"
